392 oil pressure question

Hey everyone, I'm new to the Hemi engine world. I built a 1957 392 Hemi, 9.5:1 compression, Isky hyd cam, HH 340 oil pump. Question, oil pressure is about 80 lbs when cold, about 65 warm.is this normal, seems high, but it is a fresh build...wehn it warms up, the oil pressure needle jitters about 3 - 4 lbs movement when idling, touch the throttle and the needle smooths out. Again, is this normal? Thank you!
